Ingredients

Sausage, meatless
Courgette (Zucchini)
Red Bell Pepper (capsicum)
Red Onion
Sweet Potato
Olive Oil
1. Pre-heat the oven to 200 C (390F).

2. Slice the courgette, pepper, sweet potato and red onion into chunks, then place in an ovenproof dish and drizzle over 1 tbsp. of olive oil. Bake in the oven for 35 minutes. 

3. Place the sausages in the oven to cook for 20 minutes. 

4. Serve the roasted vegetables on a plate alongside the sausages.
