Ingredients

Whole Wheat Pita Bread
Tomato Puree
Mushrooms
Tomatoes, Red, Ripe
Green Olives
Pine Nuts, dried
Ground Black Pepper
Watercress
Arugula (Rocket)
1. Pre-heat the oven to 180C (350F). 
   
2. Spread the tomato puree evenly on top of each pitta bread. 
   
3. Slice the olives and scatter on top of the pitta bread along with the mushrooms, tomatoes and pine nuts. Sprinkle the black pepper on top. 
  
4. Place the pittas onto a baking tray and bake for 15 minutes. Serve alongside the arugula and watercress.
