Ingredients

Turkey Breast
Sweet Potato
Olive Oil
Baby Spinach
Cherry Tomatoes
1. Pre-heat the oven to 200 C (390F).

2. Coat the turkey in 1 tsp of olive oil and season with salt and pepper. Wrap in foil and place in the oven to bake for 35 minutes.

3. Boil some water in a small saucepan. Add the sweet potato chunks for 20 minutes, then drain and season with salt and pepper.

4. Lay the spinach out on a plate. Cut the tomatoes into halves and place on top of the spinach. Serve the turkey and sweet potato chunks on top or on the side.
