Ingredients

Turkey Breast
Sweet Potato
Broccoli
Olive Oil
Preparation
1. Pre-heat the oven to 200 C (390F).

2. Peel the sweet potato and chop into small chunks.
Cooking
1. Coat the turkey in 1 tsp of olive oil and season with salt and pepper. Wrap up in foil and place in the oven to bake for 35 minutes.

2. Boil some water in a medium size saucepan. Add the sweet potato chunks and boil for 25 minutes.

3. Boil some water in another saucepan and add the broccoli. Boil for 10 minutes, then drain.

4. Drain the sweet potatoes, add a pinch of salt and pepper, then mash using the back of a fork.

5. Serve the turkey on a plate alongside the sweet potato mash and broccoli.
