Ingredients

Courgette (Zucchini)
Turkey Breast (Cooked)
Pesto (Basil)
Cherry Tomatoes
Pine Nuts, dried
1. To prepare the courgette spaghetti, slice each end off of the courgette. Either use a special spiral vegetable cutter to cut spirals, or use a vegetable peeler (pass the peeler down one lengthwise side of the courgette, only catching a thin portion of the courgette, no thicker than 1/2 inch. When you approach the seeds, turn the courgette and start slicing the other side). 

2. Pour a kettle of hot water over the courgetti and blanch for 30 seconds. Then toss with the pesto, slices of turkey and cherry tomatoes (sliced).
