Ingredients

Coconut Oil
Green Onions/Spring Onions or Scallions (including tops and bulb)
Garlic
Red Chilli Pepper
Fish, Sauce
Lime
Fresh Coriander
Avocado
Tomatoes, Red, Ripe
Romaine Lettuce
Ground Turkey (7% fat)
1. Finely slice spring onions, finely chop garlic clove. Roughly chop coriander leaves, avocado and tomato. Red chilli, finely sliced – careful with seeds if require milder taste. Fry the turkey mince for 2–3 minutes in a prepared large frying pan with melted coconut oil using high heat. Break up the mince as you cook. Add the spring onions, garlic and chilli and stir-fry for a further 2 minutes Please ensure the mince is cooked through. 

2. Add the fish sauce, lime juice and coriander to the pan. Mix everything together and then remove the pan from the heat. 

3. Mix the avocados and tomatoes in a bowl. 
 
4. Create boats out of the lettuce leaves and place on serving plate. Spoon mince mixture into “boat” leaves. 
 
5. Top with the avocados and tomatoes to present.
