Preparation
1. Slice tomato, onion and chilli peppers.
2. Finely chop garlic.
Cooking
1. Heat oil a frying pan over low heat. Add the tomatoes, onion, pepper, garlic and spices and cook for 15 minutes (add a little water if needed) until tender.
2. Add eggs to vegetable mixture and scramble until eggs are set.
3. Serve immediately.
