Ingredients

White Rice (long-grain)
Fish, tuna, light, canned in water, without salt, drained solids
Red Onion
Cherry Tomatoes
Romaine Lettuce
Olive Oil
1. Boil the rice in slightly salted water according to packet instructions.

2. Once the rice is cooked, drain and combine with the red onion, tomatoes, lettuce and tuna. Drizzle over the olive oil and a pinch of salt and pepper.
