Ingredients

Egg(s)
Tomatoes, Red, Ripe
Baby Spinach
Mixed Herbs
Olive Oil
1. Heat 1 tsp of olive oil on a frying pan over a medium heat.

2. Crack the eggs into a bowl and add the mixed herbs, salt and pepper. Whisk together.

3. Add the egg mixture to the pan and add the spinach and tomatoes on top. Leave to cook for 3-4 minutes until the egg is set.

4. Serve warm on a plate.
