Tofu and Vegetable Marinara
Nutrition per serving
1 Cut tofu into 1/2-inch cubes.
2 Rinse/drain black beans.
3 Finely chop onion.
4 Chop courgette.
5 Slice the pepper.
1 Heat oil in a skillet over medium-high heat. Add the tofu and stir-fry until golden.
2 Add the black beans, combine. Add the marinara sauce, combine well.
3 Add the onion, courgette and pepper. Bring to a gentle boil, lower heat, cover and simmer until vegetables are tender but crisps.
4 Serve in a bowl and sprinkle with cheese.
