Ingredients

Extra Firm Tofu
Olive Oil
Onion
Black beans (canned)
Courgette (Zucchini)
Red Bell Pepper (capsicum)
Mozzarella Cheese Substitute
Marinara Sauce

Preparation   
1. Cut tofu into 1/2-inch cubes. 
  
2. Rinse/drain black beans. 
  
3. Finely chop onion. 
  
4. Chop courgette. 
  
5. Slice the pepper.

Cooking   
1. Heat oil in a skillet over medium-high heat. Add the tofu and stir-fry until golden. 
  
2. Add the black beans, combine. Add the marinara sauce, combine well. 
  
3. Add the onion, courgette and pepper. Bring to a gentle boil, lower heat, cover and simmer until vegetables are tender but crisps. 
  
4. Serve in a bowl and sprinkle with cheese.
