Ingredients

Sweet Potato
Egg(s)
Bacon (low sodium)
Cheddar Cheese
Sour Cream (fat free)
1. Peel the skin from the sweet potato, then dice and boil in water until tender, then mash

2. Cook the bacon in a skillet

3. One the bacon is cooked, scramble the eggs and pour them into a non-stick skillet over a medium heat

4. Let the eggs set and then carefully flip over

5. Spread the sweet potato on one side of the eggs, then sprinkle cheese over the top and place the bacon and sour cream on the top

6. Fold the eggs in half and let sit for a minute

7. Remove from the heat and serve
