Goats Cheese
Mayonnaise
Bacon (low sodium)
Cayenne Pepper
1. Boil the egg in a small saucepan for 8-10 minutes, then take out of the boiling water and run under a cold tap

2. Cut the bacon into thin strips (width-wise) and crisp them up in a frying pan

3. Peel the shell off of the egg, cut in half and scoop out the yolk into a bowl

4. Whisk together the egg yolk, goats cheese, mayo, cayenne pepper and a pinch of salt and pepper

5. Scoop the mixture back into the egg white and sprinkle the bacon over the top
