Smokey Tofu with Green Beans and Avocado

Ingredients

Extra Firm Tofu
Beans, Green French Style
Ground Cumin
Sweet Smoked Paprika
Olive Oil
Avocado
Preparation
Drain the water from the tofu. Press out the moisture using paper towels. Cut into slices.

Cooking
1. In a small bowl, mix the paprika and cumin with 3 tbsp of water. Add the tofu and gently combine to coat. Leave for 5 minutes.

2. Boil some water in a saucepan. Add the green beans and cook for 10 minutes, then drain and season with salt and pepper.

3. Heat 1 tsp of olive oil in a frying pan. Add the tofu (and any remaining marinade) and cook for 2 minutes on each side.

4. Serve the tofu on a plate alongside the green beans and avocado.
