Butter (salted)
Red Bell Pepper (capsicum)
Chives
Baby Spinach
Hot Smoked Salmon
1. Cut smoked salmon into 1cm thick strips. Finely chop the chives and ensure the pepper is roughly chopped. Prepare a saucepan of water to the boil. 
 
2. Break the eggs into a large bowl. Add butter, with pepper to taste. 
 
3. Whisk the eggs together and then position the bowl over the pan of boiling water. Immediately turn down the heat to a simmer. 
 
4. Allow the eggs to cook for about 10 minutes, stir regularly. As the eggs begin to scramble, add the smoked salmon and the chives, and keep cooking the eggs until they reach preferred firmness. 
 
5. Serve eggs with a handful of spinach and black pepper to taste.
