Ingredients

Smoked Mackerel
Salt
Egg(s)
Olive Oil
Onion
Black Pepper
Baby Spinach

Preparation   
Finely slice the onion. 

Cooking   
1. Prepare mackerel according to package instructions.   

2. Heat oil in a frying pan over medium heat. Add the onion and cook until soft. Remove from heat, add the baby spinach and combine with onions until wilted. Season with a pinch of salt and pepper.  Meanwhile, poach an egg.     

3. Serve the mackerel on top of the spinach with the poached egg on top.
