Ingredients

Peanut Oil
Chicken Breast
Sauce, Sweet Chilli
Peanut butter, smooth, reduced fat
water, tap, drinking
Stir-fry Vegetable Mix (frozen)
Chow Mein Noodles
Preparation
Cut chicken into strips.

Cooking
1. Cook the noodles according to package instructions. Drain and set aside. 
  
2. To make the satay sauce, in a bowl mix the peanut butter, chilli sauce and water. Set aside. 
  
3. Heat 1/2 a teaspoon of peanut oil in a frying pan over medium-high heat. Add the chicken and stir-fry for 4-5 minutes. Remove and set aside. 
  
4. Heat remaining oil in the frying pan and stir-fry the vegetables for about 4 minutes. 
  
5. Add the noodles and chicken to the pan, combine well and continue to cook for about 2 minutes until vegetables are tender. Add the sauce, stir to coat and cook for a further minute. 
  
6. Serve in a bowl.
