Ingredients

New Potatoes
Carrot
Salmon Fillets

1. Prepare by preheating oven to 200C (390F) and heat up a baking tray. Thinly slice both the baby potatoes and peeled carrot. Cut lemon into wedges. 

2. Cover the baking tray fully with sheet of foil. Add a square of baking paper foil (about 16 by 16cm) into the centre of the foil. 

3. Steam the potato and carrot so tender. 

4. At the same time rub grated lemon rind into salmon and season with black pepper.

5. Put the steamed potato and carrot slices into the centre of baking paper. Add on top the spinach leaves and salmon. Add to this the chopped dill and pistachio dukkah. Create a parcel by folding paper around topped salmon, potato and carrots. Then fold the foil around the paper parcel. 

6. Put the parcel onto heated baking tray and bake for 25-30 minutes. 

7. Plate and add lemon wedges. Season with pepper to taste.
