Ingredients

Salmon Fillets
Sweet Potato
Romaine Lettuce
Red Onion
Tomatoes, Red, Ripe
Olive Oil
1. Pre-heat the oven to 200 C (390F).

2. Prick the potatoes with a fork or knife several times, then place in the microwave for 10 minutes. 

3. Place the potatoes on the top shelf of the oven to bake for 45 minutes.

4. Wrap the salmon in foil and place in the oven to bake for 20 minutes.

5. Serve the salmon and baked potatoes on a plate alongside the lettuce, tomatoes and red onion. 

6. Drizzle over 1 tsp of olive oil and sprinkle over a pinch of salt and pepper.
