Ingredients

Salmon Fillets
Egg(s)
Spinach
Garlic
Olive Oil
1. Pre-heat the oven to 170 C (340 F).

2. Drizzle 1 tbsp of olive oil into a medium-sized ovenproof dish. Add the spinach, garlic and a pinch of salt and pepper. Combine to coat in the olive oil.

3. On one side of the dish, place the salmon fillet on top of the spinach. On the other side, crack the egg on top of the spinach. Season with salt and pepper.

4. Place in the oven to bake for 25 minutes.
