Ingredients

White Rice (long-grain)
Soya Mince
Black Beans (canned)
Chopped Tomatoes (canned)
Baby Spinach
Onion
Garlic
Chili Powder
Paprika
Olive Oil
Preparation
Drain and rinse the black beans.

Cooking
1. Boil some water in a small saucepan. Add the rice and boil for 15-20 minutes, then drain.

2. Heat 1 tbsp of olive oil in a frying pan. Add the onion and fry for 2 minutes, then add the garlic and fry for a further minute. Add the chopped tomatoes, soya mince and black beans along with the spices and a pinch of salt and pepper. Stir to combine and cook for 15 minutes. Add water if necessary.

3. Serve the rice and chilli on a plate, on top of the spinach.
