Preparation
Drain and rinse the black beans.
1. Boil some water in a small saucepan. Add the rice and boil for 15-20 minutes, then drain.

2. Heat 1 tbsp of olive oil in a frying pan. Add the onion and fry for 1 minute, then add the mince and garlic and fry for a further 3 minutes. Add the chopped tomatoes and black beans along with the spices and a pinch of salt and pepper. Stir to combine and cook for 15 minutes. Add water if necessary.
3. Serve the rice and chilli on a plate, on top of the spinach.
