Ingredients

Prawns
Fresh Coriander
Lemon Juice
Curry Powder
Onion
Garlic
Olive Oil
White Rice (long-grain)
Chicken Stock
Mushrooms
Peas Green, Frozen
Plain Yogurt (low fat)
Fresh Coriander
1. Add chopped coriander, lemon juice and half the curry powder to the peeled prawns. Then leave to one side. 

2. Add finely chopped onion and chopped garlic in a bowl with oil. Cook in microwave on a high setting for a minute. 

3. Add rest of curry powder and cook for 1 minute. 

4. Add rice, stock and 1/4 cup water to bowl and cook on high setting for 4 minutes. Stir occasionally. 

5. Now add sliced mushrooms and a further 1/4 cup water and cook for 1 minute on high setting. Stop microwave after 30 seconds and stir. 

6. Add prepared prawns and cook on high setting for 2 minutes. 

7. Add peas and cook on high setting for 2 minutes.

8. Plate and add yoghurt and chopped coriander.
