Preparation
1. Thinly slice pork tenderloin.
2. Dice onion.
3. Finely chop garlic.
4. Trim shrubby ends of asparagus and cut in half.
Cooking
1. Heat oil in a skillet over medium-high heat, add the pork, onion, salt and pepper and cook until pork is lightly golden on both sides.
2. Add garlic, tomatoes and continue to cook for 8-10 minutes.
3. Add cauliflower and asparagus, cover pan and cook for a final 5-8 minutes until vegetables are tender.
4. Serve immediately.
