Plum Sauce |
1. Cook noodles as per instructions on packet. Drain then transfer to bowl and keep warm.
2. At same time add vegetables to bowl with 1 tablespoon water. Cover bowl and then microwave on high setting for 3 minutes, so that vegetables are tender.
3. At same time add plum sauce and 1 tablespoon water in another bowl and mix. Then leave to wait.
4. Thinly slice diagonally the pork fillet. Add oil to wok and swish around to cover then place over high heat. Add pork and stir-fry for 3–4 minutes, so that pork has cooked through.
5. Add plum cut into wedges and stir-fry for 1 minute.
6. Now add the waiting vegetables and plum sauce. Mix thoroughly and heat through.
7. Plate noodles and top with stir-fry mixture.
