Preparation
Slice the onion and mushrooms.
Cooking
1. Bring 1/3 cup of water in a pan to a boil over medium/high. Sprinkle cod with lemon/lime juice and salt and pepper to taste and place in the boiling water. When the water is boiling again, reduce heat to medium and poach for 5-8 minutes until fish flesh is firm and fish flaky.
2. Meanwhile, heat oil in a skillet over medium-high heat. Add the onions and suaté for a few minutes. Add mushrooms, tomatoes, cook a further 4 minutes and finally add the spinach and cook until wilted.
3. Serve the fish on top of the vegetables.
