1. Brown the sausage until cooked in a skillet over a medium heat with 1 tbsp of olive oil
2. In the meantime, dice the vegetables
3. Add the vegetables to the skillet and sauté until tender
4. Add the pepperoni, spinach, black olives and mixed herbs, and cook until the spinach has wilted
5. Serve warm with the cheese torn over the top
