Pasta with Chicken, Broccolini, Roasted Capsicum, Lemon and Feta

Ingredients

Penne Pasta
Olive Oil
Chicken Breast
Lemon Zest
Roasted Peppers (jarred)
Broccolini (tenderstem)
Lemon Juice
Feta Cheese
Preparation
1. Trim the broccolini and slice lengthways. 
  
2. Thinly slice chicken. 
  
3. Slice roast peppers. 
  
4. Juice and zest the lemon. 

5. Crumble feta cheese.

Cooking
1. Cook the pasta according to package instructions. Add the broccolini 2 minutes toward the end of cooking time. Drain and set aside. 
  
2. Meanwhile, heat oil in a skillet over medium-high heat. Add the chicken and stir-fry for 4 minutes until golden. Add lemon zest, red peppers and continue to cook fo a few minutes. 
  
3. Add the pasta/broccolini, lemon juice and feta to the pan and stir to combine. 
  
4. Serve with a sprinkle of black pepper.
