Ingredients
Orange Juice | |

1. In a bowl, mix together the orange juice and zest
2. Whisk in 1 tsp of olive oil, the onion and a pinch of salt (optional) and pepper
3. Season the pork with salt and pepper
4. Using a food processor, grind the almonds and Parmesan to the texture of fine breadcrumbs, then place in a small bowl
5. Heat 2 tsp of olive oil in a skillet over a medium heat
6. Dip the pork in a small amount of water then place in the almond/cheese mixture and coat well, then place into the skillet
7. Cook the pork for 3 minutes on each side
8. Add the spinach to the marinaded onions and toss to coat, serve alongside the pork
