1. Add chopped potatoes and 2 tablespoons water to a dish. Microwave on high for around 3 to 4 minutes, so almost tender. Keep half of the potato to one side of dish. Take out the remaining half of the potato and leave to wait to one side.
2. Add fish fillet to dish with potatoes and top with mixed seasoning. Mix shredded lettuce, sliced shallot, peas and halved cherry tomatoes together in a large bowl and then add on top of fish. Season with cracked black pepper to taste and drizzle with olive oil.
3. Place the waiting potato around the fish in dish. Cover dish with a lid and microwave on high for 2 – 3 minutes. Leave to rest for a few minutes.
4. Serve fish with lemon wedges to taste.
