Ingredients

Olive Oil
Salmon, Atlantic, wild
Garlic
Tomatoes, Red, Ripe
Balsamic Vinegar
Basil Leaves
1. Heat 1 teaspoon of the olive oil in a saucepan on medium heat. Cook the salmon in the pan until the salmon flakes easily. 6 minutes either side. 

2. Heat the further oil in another saucepan on medium heat. 

3. Add the garlic and cook for a minute. Add the tomato and cook for another 5 minutes. Add the vinegar and the basil. Mix all through for a further 3 minutes. 

4. Place salmon on a plate and top with the sauce. Serve.
