Ingredients
Fish, Halibut, Atlantic and Pacific | |

Preparation
1. Preheat grill to medium-high.
2. Thinly slice tomatoes and black olives.
3. Crumble feta cheese.
4. Slice olives.
Cooking
1. Heat 1 teaspoon of olive oil in a skillet over medium-high heat.
2. Pat halibut dry and season with salt (optional) and pepper. Add to the skillet and cook for 2-3 minutes each side turning once, until golden and flaky.
3. Meanwhile, place the sliced tomatoes on a baking sheet and drizzle with olive oil. Sprinkle with parsley, oregano and salt (optional) and pepper.
4. Place under the grill and cook for 5 minutes.
5. Turn tomatoes over and sprinkle with feta cheese. Add the olives to baking sheet.
6. Return to grill and cook for 5-7 minutes until cheese melts and tomatoes are tender.
7. Meanwhile, steam the green beans in a small amount of water (1/2-inch of water) for 3-5 minutes until tender but crisp.
8. Serve the fish on top of the tomatoes/feta with the olives and green beans on the side.
