Preparation
In a small bowl, combine olive oil, thyme, salt (optional) and ground black pepper. Mix well. Rub this seasoning to chicken breast evenly.
Cooking
1. Toast chopped walnuts in a skillet over low or until walnuts are golden and fragrant. Stir walnuts while cooking so it doesn't burn.
2. Transfer toasted walnuts in one plate.
3. Heat up the skillet and add chicken. Cook chicken on both sides, turning frequently for about 12 minutes or until chicken is completely cooked.
4. Transfer chicken to a serving plate.
5. Pour in vinegar into the hot skillet and cook with the chicken drippings for about 1 minute, stirring frequently.
6. Stir in water and maple syrup, reduce the heat to low and allow the mixture to simmer for another 7 minutes or until sauce thickens slightly. Stir in chopped toasted walnuts.
7. Drizzle the thickened sauce over the chicken.
