Ingredients

Cod, Pacific
Green Olives
Capers (canned)
Lemon Juice
Lemon Zest
Olive Oil
Fresh Thyme
Mixed Salad Leaves
Preparation
1. Preheat the oven to 200C/Gas mark 6/390 F. 
  
2. Coarsely chop olives and capers. Snip thyme leaves. 
  
3. Place olives and capers in a small bowl. Add lemon juice, zest and olive oil. Mix well. 
  
4. Add thyme leaves and season with fresh ground black pepper. Mix well.

Cooking
1. Place cod fish fillet in a roasting tin. 
 
2. Drizzle olives/capers mixture over the fish and cover with foil. 
  
3. Roast until fish is opaque. 
  
4. Serve fish with mixed salad greens.
