1. To make the marinade, in a bowl, combine the lemon juice, garlic, oregano and a pinch of salt (optional) and pepper, then whisk in 2 tsp of the olive oil
2. Pour half of the marinade into another bowl and add the chicken (cut into chunks), then place in the fridge to marinate for 30 minutes
3. Thread the chicken onto skewers and discard the marinade
4. Heat 2 tbsp of olive oil in a skillet over a medium-high heat, then add the chicken skewers and cook for 4 minutes on each side
5. To make the salad, combine the tomatoes and parsley with the remaining marinade, then serve alongside the chicken
