Feta Cheese (reduced fat)
Tangerines (mandarin)
1. In a small bowl, whisk the egg whites, with salt (optional) and pepper. 
  
2. Heat oil in a small frying pan over medium heat. Add the egg mixture and cook (lifting edges to allow uncooked egg to flow underneath.) When almost set, top with prosciutto and cheese. Cook until set. 
  
3. Slide omelette onto a plate and serve with mandarin on the side.
