1. Pre-heat the oven to 200 C (392 F).
2. Coat the chicken in 1 tsp of olive oil and the curry powder. Wrap the chicken in foil and bake in the oven for 35-45 minutes.
3. Boil some water in a saucepan. Add the potatoes and boil for 30 minutes, then drain.
4. To cook the spinach, heat 1 tsp of olive oil in a pan over a medium to high heat. Add the spinach and gently toss and turn using tongs for about 2 minutes or until wilted.
5. Serve the chicken on a plate alongside the potatoes and spinach.
