Preparation
1. Peel and cut carrots into batons.
2. Cut the chicken into strips.
3. Crush cashew nuts.
Cooking
1. Prepare rice according to package.
2. In a small pot, bring lightly salted water to boil, add carrots and cook, until tender. Drain and set aside.
3. Heat oil in a frying pan over medium heat, add chicken to brown.
4. Add the honey and soy sauce then stir in carrots. Cook for 2 minutes.
5. Serve with rice and sprinkle cashews on top of the chicken.
