1. Slice the tomato and gherkin. Finely chop red onion and garlic clove. Cut sweet potato into fries.
2. Preheat grill to maximum.
3. Cook the sweet potato fries in the microwave at 900w for 7 minutes then leave to rest for 30 seconds.
4. At the same time mix the beef with the onion and garlic. Add a good pinch each of salt and pepper. Shape the mixture into a burger about 2cm thick. Place on your grill pan and grill for 5 minutes on each side.
5. Heat the coconut oil in a large frying pan with a high heat. Add the sweet potato fries and fry, until browned over, for about 3 minutes on each side. Remove from pan and drain on paper towels. Then season with salt.
6. Mix together the chipotle paste and crème fraiche in a small bowl.
7. Cut the burger bun in half. Create the burger by starting with beef patty, then top with tomato, gherkins, lettuce and chipotle-crème fraiche sauce. Close with the top half of the burger bun.
8. Serve with the sweet potato fries.
