Ingredients

Chicken Tenderloin
Mixed Herbs
Cucumber
Feta Cheese (reduced fat)
Mixed Salad Leaves
Balsamic Vinegar
Whole Grain Bread
Red Pepper Hummus
Tomatoes, Red, Ripe
Cooking Spray Olive Oil
1. Spray oil on chicken and add on top mixed herbs. Heat in preheated grill for 8 – 10 minutes so appears golden. 

2. At same time create salad by mixing together chopped tomato, sliced cucumber, crumbled feta and salad greens. Then add vinegar and mix together well. 

3. Toast wholemeal bread. 

4. Place salad on plate and top with the cooked chicken. 5. Spread hummus over toast and serve with chicken and salad.
