Ingredients

Red Bell Pepper (capsicum)
Green Onions/Spring Onions or Scallions (including tops and bulb)
Lemon
Pomegranate
Fresh Mint Leaves
Za'atar Seasoning
Freekeh
Olive Oil
Preparations
1. Core and finely dice the pepper into ½ cm cubes.

2. Finely slice the spring onions.

Cooking Instructions
1. Boil the freekah in a pan of lightly salted water. Cover, lower heat and simmer for 10-15 minutes until the liquid has absorbed. Stir occasionally. Remove from heat and set aside.

2. Meanwhile, to make the dressing, in a bowl, add the zest/juice of ¼ of a lemon, ¼ tsp of salt, ½ tsp of zahtar spice and a tbsp of olive oil. Mix well to combine.

3. Fluff the freekah with a fork to separate the grain. Add the diced peppers, spring onions, pomegranate seeds, ½ the dressing and stir to combine.

4. Serve in a bowl with the remaining dressing drizzled over the top.
