1. Trim and halve the asparagus. Then add to a bowl and cover with boiling water. Leave for 1 – 2 minutes so tender. Drain water and leave to wait.
2. Add oil to frying pan or similar using a medium heat. Whisk 2 eggs and pour into pan. Make sure to rotate cooked and uncooked around into the centre of the pan allowing uncooked eggs to slide to the sides.
3. After the eggs have cooked, add the waiting asparagus, ham and cheese on one half of omelette.
4. Turn the other half of omelette over filled half and transfer carefully to serving plate. Serve with bread that has already been toasted.
