Preparations
1. Slice potatoes in half lengthways.

2. Remove core from pear and slice into slivers. (Just before serving).
1. Bring a small pot of water to boil. Add the potatoes and cook for about 10 minutes until tender.

2. Drain and run under cold water for about 30 seconds to cool down.
3. To make the salad place the potatoes and the baby spinach into a serving bowl and drizzle over half a teaspoon of olive oil and a pinch of salt and pepper. Gently toss to coat.
4. Sprinkle the goat cheese over the salad and place the sliced pears on top.
5. Sprinkle the walnuts on top and serve.
