Ingredients

Mixed Salad Leaves
Rice Wine Vinegar
Olive Oil
Mixed Herbs
Garlic
Goat Cheese (semisoft type)
Tomatoes, Red, Ripe
Preparation
1. Crush the garlic. 

2. Slice top of tomatoes. Scoop out pulp and seeds. 

3. Place tomatoes upside-down on a sheet of paper towel to drain. 

4. Meanwhile, combine goat cheese, mixed herbs. 

5. Stuff goat cheese mixture on each tomato. Top with tomato lids.

Cooking
1. Arranged stuffed tomatoes on a shallow baking tray. 

2. Drizzle half of the olive oil over tomatoes and bake for about 10 minutes or until tomatoes soften. 

3. In a small bowl combine remaining olive oil and rice wine vinegar. Season with a dash of salt and pepper. 

4. Toss mixed salad greens with the dressing. 

5. Serve stuffed tomatoes along with salad greens.
