1. Prepare by preheating oven to 180 C (356 F). Rinse and drain lettuce and spinach and leave to side. Thinly cut the red onion. Cut strawberry into wedges.
2. Prepare dressing by squeezing lemon and orange juice into a small bowl and then add the Dijon mustard and mix. Add olive oil and keep stirring.
3. Cut the soft goat cheese in half and place on rack with the cut side up and bake in prepared oven for 5-10 minutes so top is golden.
4. At the same time chop the spinach and green leaf lettuce and put on plate.
5. Caramelize the red onion by adding into a hot pan greased with some oil.
6. Add goat cheese from the oven onto the top of the spinach and lettuce.
7. Add strawberry wedges, crumbled walnuts on to the goat cheese salad and pour the prepared dressing over.
8. Add caramelized onion and serve.
