1. Heat 2 tsp of olive oil in a skillet over medium-high heat. Add the pork chop and sear/brown both side. Add the garlic, vinegar and stock. Bring to a gentle boil, lower heat, cover pan and simmer for about 40-45 minutes until cooked.
2. Remove pork chop to a serving plate to rest. Return pan with cooking liquid to heat and simmer until slightly thickened.
3. Heat 1 tsp of olive oil in another skillet and add the spinach. Sauté for several minutes until wilted.
4. Spoon the sauce over the pork chop and serve with sautéd spinach.
