Ingredients

Chicken Breast
White Rice (long-grain)
Olive Oil
Garam Masala
Baby Spinach
Tomatoes, Red, Ripe
1. Pre-heat the oven to 200 C (392 F).

2. Coat the chicken in 1 tsp of olive oil and the garam masala. Wrap in foil and place in the oven to bake for 45 minutes.

3. Boil some water in a small saucepan. Add the rice and boil for 15 minutes, then drain.

4. Lay the spinach out on the corner of a plate. Cut the tomatoes into halves and place on top of the spinach. Serve the chicken and rice on the side.
