French Style Cod With Black Olives

Ingredients

Butter (salted)
Red Onion
Garlic
Atlantic Cod
Chopped Tomatoes (canned)
Black Olives
Mozzarella Cheese (whole milk)
Pine Nuts, dried
Basil Leaves
Smoked Bacon
1. Cut bacon rashers into 1cm strips, dice the red onion, finely chop garlic clove, skin and cut cod fillet into 2cm chunks, ensure mozzarella ball is torn into chunks. Melt butter in a large frying pan over a medium to high heat. 

2. Add the bacon and onion and fry until the onion is starting to soften and the bacon is cooked. Around 2 minutes. 

3. Add the garlic and cook for a further 30 seconds. 

4. Add the chunks of cod and fry for two minutes. Remember to turn the cod over every now and then. 

5. After the two minutes add the tomatoes and bring to the boil. 

6. Then reduce the heat to a simmer and cook for 2–3 minutes.  

7. Add the olives and mozzarella, then take the pan off the heat and let the mozzarella melt. Top the served cod with the pine nuts – and chopped basil leaves to taste.
