1. The red chilli is finely sliced –careful with seeds if require milder taste. Preheat grill to maximum. Place bacon on grill pan or similar and grill for 3 minutes on each side.

2. At same time slice avocado in half. Ensure to remove the stone and then scoop out a good tablespoon of flesh from each half of the avocado to create a space sufficient for the egg. 

3. Crack an egg into each avocado half. Season to taste with salt and pepper. Cook the eggs in 30-second bursts for 2 minutes in a microwave. Make sure whites are firm but have runny yolks. 

4. Serve up the baked eggs and avocado with the bacon and add chilli slices to taste.
