1. Prepare by preheating oven 230 C (446 F). Have a baking tray ready with lined baking sheet paper. Finely grate the cheese. Separate the whites into bowl from the egg yolks. Keep the egg yolks in the shells and leave to side for later use.
2. Add salt into the whites and beat well.
3. Fold the cheese into the whipped whites and slowly stir in.
4. Create mounds using the egg white mixture, using a spoon or similar to create small dents in the centre.
5. Put the tray in the oven and bake for about 3 minutes.
6. Pull tray out and add the waiting egg yolks to the centre off each mound (nest). Season with salt and freshly ground black pepper. Put tray back in the oven and bake for a further 3 minutes.
7. Plate and serve.
