Preparation
- Chop the green beans into 1cm pieces.
- Drain and rinse the black beans.
- Boil some water in a medium saucepan. Add the rice and green beans and boil for 20 minutes.
- Heat 1 tbsp of olive oil in a large frying pan. Add the onion and fry until softened and browned. Add the garlic and fry for a further minute.
- Add the eggs with a little salt and pepper and whisk until they begin to scramble.
- Add the black beans along with the cooked rice and green beans, and stir well to coat in the eggs. Serve in a bowl.
